Matured for 20 years and bottled at 44.8% ABV, TIME: SPACE Sherry Cask represents a significant milestone for The Macallan. It is the first whisky to be influenced by casks seasoned with The Macallan’s own Valdespino sherry since Valdespino became part of the company’s ownership, deepening the distillery’s long-established relationship with Jerez and sherry-seasoned oak.

The Story Behind TIME: SPACE Sherry Cask

The whisky began its maturation journey at The Macallan Estate in Speyside, in a carefully selected range of predominantly European oak casks seasoned with sherry.

It was then further elevated through a marrying period in a selection of the first 200 sherry casks seasoned at The Macallan’s Valdespino bodega in Jerez. These casks were crafted in The Macallan’s Jerez cooperages and arrived at The Macallan in 2024, making their role in this release an important connection between the distillery’s Scottish heritage and its evolving stewardship of sherry-seasoned oak.

This two-stage interaction with sherry-seasoned oak gives TIME: SPACE Sherry Cask its distinctive identity and makes it an important release for collectors following the development of The Macallan’s sherry cask programme.

Tasting Notes

Colour: Natural colour.

Nose: A rich medley of sherry-soaked raisins, figs and Medjool dates, followed by sweet frangipane, cinder toffee and caramelised nuts. Dark chocolate truffles combine with cinnamon, star anise and ginger to add depth and aromatic warmth.

Palate: Opulent and complex, with sultanas, dates and apricots layered with rich ginger cake, treacle toffee, bramble jam and chocolate-coated cherries. Clove and cinnamon bring warming spice, while cocoa nibs and polished oak add structure and depth.

Finish: Warming wood spices, a subtle hint of espresso and gentle oak create a lingering finish.
